Metabolic Cooking – Salad Dressing with a difference

I tried this recipe for a salad dressing with a difference by Chef Mike Isabella and made a few adjustments to suit my palette.  It is delicious and so I thought I would post it for you all to give a try. It is great for those that are on the Metabolic Cooking experience.

1 ½ rounds of feta cheese

2 tablespoons of the brine from the feta cheese container

3 tablespoons of freshly squeezed lemon juice

3 tablespoons of extra-virgin olive oil

1 tablespoon of truffle flavoured olive oil

1 teaspoon of very finely chopped basil

 

Put all of the ingredients into a blender and blend until really well mixed and smooth.

 

This dressing will last about a week or so in the refrigerator.
